Carfax would probably just show the VIN as it was when it left the factory, so it'd show as a GT. Try sending the VIN to customerservice@saleen.com . I'm 99.9% sure of what they'll tell you which is not what you wanna hear. Depending on how much you paid for the car, you might want to check with a lawyer, but I suspect that since the salesman only verbally confirmed that it was a Saleen and your paperwork says GT, you're probably screwed. Best thing you can probably do is spread the word that Stevenson sucks ass.
